Waterford Gaia 2.1 is the first release from the second harvest of organic barley that Waterford distilled. It was fermented for 181 hours and aged for 4 years and 7 months. The whisky has a rich texture with notes of fig rolls, grapefruit, orange zest, cherry and liquorice with a long and complex finish. Ireland's only certified organic whisky.
