The harmonious vatting of bourbon and sherry casks yields a whisky that balances coastal smoke with a bright palate of tropical fruits and honeyed malt.
Production: Locally grown barley is floor-malted, fermented in wooden washbacks for 90 hours, then distilled in copper stills. The new make spirit is matured in a blend of first-fill bourbon barrels and Oloroso sherry butts.
Pairing Suggestions: Perfect with spiced pork belly tacos, it also complements creamy chèvre.
Tasting Note: On the nose, floral intensity meets lemon zest and sea spray, while the palate bursts with juicy peaches, dried sultanas and honey, finishing with peppery smoke and a hint of sea salt.
